For a new-ish Zbrusher I suggest your draw masks of the details you want, polygroup by mask at each milestone so that you can mask and unmask those portions quickly for inflations, panel looping, or...
Since your early sculpts will probably end up with undercuts (perhaps latter sculpts too, it's a matter of work style) remember you can always use the Zproject brush to make latter toolpath...
